Olio Nouvo is olive oil at its most unabashed, virginal state. Its the first bottling of the oil, obtainable only during the olive harvest. Olio Nouvo is to olive oil as Nouveau Beaujoliais is to wine. It is robust with tasting notes of green tea. One experiences an explosion of flavors coming from the high level of the health promtoing phenols and suspended organic compods. Because this is not a filtered oil, to experience the highest quality consume within 6 months. Enjoy it fresh, enjoy it once a year. It's stunning, bold and invigorating. Enjoy it over hot pastas, rice, couscous, soups, vegetables, meats and seafood. Or simply use as a dipping oil.
