Sonora white spring wheat may be the first domesticated wheat introduced to New World. It thrived in the desert conditions of Northern Mexico and Southwest US, which is one reason flour tortillas remain a staple of the region.
Sonora's light bran and moderate hardness makes it a wonderful whole grain flour that can be substituted for unbleached all purpose flour in most recipes (it will require more hydration than sifted flour). It has a clean light flavor, with a warm-toast aroma when being milled or in the oven.
Great for baguettes, pizza dough, flat breads and more. Sonora is beloved by professional artisan bread makers as well as discerning home bakers.
