Hard Red wheats are the most widely grown and milled class of wheat, given their high protein and excellent gluten properties. However, when milled as a wholegrain flour the ruddy outer bran layer gives this glass its name can be bitter. 

A number of Hard Red Wheat varieties have lower tannins, and aren't bitter like their cousins. These are the varieties Capay Mills uses to make robust, flavorful, strong flours on their stone mills.
