Koroneiki Quinoa
This recipe goes great with roasted pork or chicken, or as a healthy stand-alone dish!

Ingredients
  • 2tbsp Koroneiki Olive Oil[BUY NOW]
  • 1/4cup chopped red onion
  • 2cloves garlic, minced
  • 5 or morewhole mushrooms, mixed varietes
  • 1cup quinoa
  • 32ounces chicken stock
  • 1/4cup white wine
  • 1/2cup parmesan cheese
Instructions
  1. Pour Koroneiki in saute pan, heat at medium
  2. Add red onion, garlic and mushrooms. Saute until brown, about 5 minutes.
  3. Add quinoa, mix quinoa with mixture, make sure to coat it with the olive oil.
  4. Add wine and chicken stock to pot. Cover and let simmer, stirring occasionally until liquid has absorbed.
  5. Add 1/2 cup parmesan cheese and stir to combine. Enjoy!
