  • 2 cups diced butternut squash
  • 1 cup diced apples
  • 4 tbsp EVOO
  • 2 tbsp Olio Nuovo [BUY NOW]
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp allspice
  • 1 tsp kosher salt (divided)
  • 1 tsp black pepper (divided)
  • 8 slices french bread
  • 1 cup ricotta cheese
  • 4 cloves garlic, minced
  • 6-8 fresh sage leaves (chopped)
  • 1/4 cup Plum Basil Balsamic Vinegar [BUY NOW]
  • 2 tbsp red wine

  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

  • 8 slices french bread
  • 1 cup ricotta cheese
  • 4 cloves garlic, minced
  • 6-8 fresh sage leaves (chopped)
  • 1/4 cup Plum Basil Balsamic Vinegar [BUY NOW]
  • 2 tbsp red wine
Instructions
  1. In a small sauce pan bring to a boil 1/4 cup Plum Basil Balsamic and 2 tbsp of red wine, reduce the heat and simmer down stirring occasionally until it gets reduced by 1/3. Set aside to cool down and thicken.
  2. Preheat oven to 400F
  3. Toss the butternut squash, apple, garlic, and half of the sage with 2 tbsp of EVOO, and spices. Sprinkle with 1/2 tsp of salt and 1/2 tsp of pepper. Bake for about 20 minutes.
  4. Meanwhile brush slices of bread with EVOO and set aside.
  5. Combine the ricotta cheese with remaining 1/2 tsp of black pepper, 1/2 tsp of salt.
  6. When squash is ready, pull it out of the oven and set aside. Place the slices of bread into the oven for about 5 minutes , or until toasted to your liking.
  7. Remove the bread from the oven, top with the ricotta cheese, drizzle with Olio Nuovo, then top with roasted squash and apple mix.
  8. Finish your bruschetta with a drizzle of the Plum Basil glaze and fresh sage.
