This is quite simply a fantastic oil. Well balanced, this is a field blend of Arbequina and Arbosana, two Spanish varietals. Normally these two varietals are somewhat mild, but owing to the cool ocean breezes that bathe this ridge, 1,500 feet above the Carmel Valley floor, this oil has character and robustness that belays it’s heritage. A great “cross over oil” with a note of cinnamon and green tea, this oil is subtle enough to use on salads, but bold enough to serve as a finishing oil for pastas, bread dipping, meats and grilled vegetables. This is one of our “locals”, and we love it. COOC certified.
